A healthy and delicious crustless quiche made with cottage cheese and spinach, perfect for any meal.
Ingredients
- 1 tbsp olive oil
- ½ small onion, finely diced
- 2 cloves garlic, minced
- 5 oz fresh spinach
- 6 large eggs
- 1 cup cottage cheese
- ½ cup shredded mozzarella cheese
- ½ cup shredded Parmesan cheese
- ½ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp Italian seasoning
- ¼ tsp red pepper flakes, optional
Instructions
- Preheat the oven: Heat oven to 375°F. Grease a 9-inch pie dish or quiche dish with cooking spray or a little butter.
- Cook the spinach: Heat olive oil in a skillet over medium heat. Add the onion and cook for 3–4 minutes. Add garlic and cook for 30 seconds. Add spinach and cook until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
- Make the egg mixture: In a large bowl, whisk together eggs, cottage cheese, milk, mozzarella, Parmesan, salt, black pepper, garlic powder, Italian seasoning, and red pepper flakes.
- Combine: Stir the cooled spinach mixture into the egg mixture.
- Bake: Pour into the prepared pie dish and spread evenly. Bake for 35–45 minutes, until the center is set and the top is lightly golden.
- Rest: Let the quiche cool for 10 minutes before slicing. This helps it set and makes cleaner slices.
- Serve: Enjoy warm or at room temperature with a fresh salad, roasted vegetables, or fruit.
