A delicious and hearty dish featuring fresh green beans and baby potatoes cooked with crispy bacon and ranch seasoning.
Ingredients
- 2 cups fresh green beans, trimmed
- 1 pound baby potatoes, halved
- 4 slices bacon, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ranch seasoning mix
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10 minutes, or until tender. Add the green beans to the pot and cook for an additional 3-4 minutes. Drain and set aside.
- In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel to drain, leaving the bacon grease in the skillet.
- Add olive oil to the skillet with the bacon grease. Add the cooked potatoes and green beans to the skillet. Sprinkle with garlic powder, onion powder, ranch seasoning, salt, and pepper. Toss to combine and cook for an additional 5 minutes, stirring occasionally, until heated through and slightly crispy.
- Stir in the cooked bacon and toss everything together. Remove from heat and garnish with fresh parsley if desired.
- Serve warm as a side dish or a hearty main course.
Notes
- For a creamier texture, consider adding a splash of heavy cream or a dollop of sour cream before serving.
- To make it a complete meal, add cooked chicken or sausage to the skillet along with the vegetables.
