A comforting and delicious lasagna filled with roasted vegetables, perfect for a cozy meal.
Ingredients
- 2 medium zucchini, sliced into thin rounds
- 1 medium eggplant, diced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 3 cups marinara sauce
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine zucchini, eggplant, red and yellow bell peppers, onion, garlic, olive oil, oregano, basil, salt, and pepper. Toss until vegetables are evenly coated.
- Spread the vegetable mixture on the prepared baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and set aside.
- While the vegetables are roasting, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a medium bowl, mix the ricotta cheese with the egg, and season with salt and pepper.
- Spread 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 3 lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles, followed by half of the roasted vegetables, 1 cup of marinara sauce, and 1 cup of mozzarella cheese.
- Repeat the layers, starting with 3 more noodles, the remaining ricotta mixture, the remaining roasted vegetables, another cup of marinara sauce, and 1 cup of mozzarella cheese.
- Top the final layer of noodles with the remaining marinara sauce, the remaining mozzarella cheese, and sprinkle with Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For added flavor, consider mixing in some fresh spinach with the roasted vegetables.
- For a heartier dish, include cooked ground turkey or beef in the layers.
