Description

A comforting and delicious lasagna filled with roasted vegetables, perfect for a cozy meal.


Ingredients

  • 2 medium zucchini, sliced into thin rounds
  • 1 medium eggplant, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine zucchini, eggplant, red and yellow bell peppers, onion, garlic, olive oil, oregano, basil, salt, and pepper. Toss until vegetables are evenly coated.
  3. Spread the vegetable mixture on the prepared baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and set aside.
  4. While the vegetables are roasting, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  5. In a medium bowl, mix the ricotta cheese with the egg, and season with salt and pepper.
  6. Spread 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 3 lasagna noodles over the sauce.
  7. Spread half of the ricotta mixture over the noodles, followed by half of the roasted vegetables, 1 cup of marinara sauce, and 1 cup of mozzarella cheese.
  8. Repeat the layers, starting with 3 more noodles, the remaining ricotta mixture, the remaining roasted vegetables, another cup of marinara sauce, and 1 cup of mozzarella cheese.
  9. Top the final layer of noodles with the remaining marinara sauce, the remaining mozzarella cheese, and sprinkle with Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  11. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

  • For added flavor, consider mixing in some fresh spinach with the roasted vegetables.
  • For a heartier dish, include cooked ground turkey or beef in the layers.
