Description

A delicious and creamy avocado grilled cheese sandwich that combines the richness of avocado with melted cheese for a delightful meal.

Ingredients

  • 1 large ripe avocado
  • 1 teaspoon fresh lemon juice
  • 1 small garlic clove, finely minced
  • 1 tablespoon mayonnaise or softened cream cheese
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 4 slices sourdough or thick-cut sandwich bread
  • 2 tablespoons softened butter
  • 4 slices cheddar cheese
  • 2 slices mozzarella or provolone cheese
  • 1 tablespoon grated Parmesan cheese, optional

Instructions

  1. Make the Creamy Avocado Filling: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until mostly smooth, leaving a few small chunks for texture. Add the lemon juice, minced garlic, mayonnaise or cream cheese, salt, black pepper, and red pepper flakes if using. Mix until creamy and well combined. Taste and adjust the seasoning as needed.
  2. Prepare the Bread: Lay the bread slices on a clean work surface. Spread softened butter evenly over one side of each slice. These buttered sides will face outward when grilling. Turn two slices over and spread the avocado mixture on the unbuttered sides. Place two slices of cheddar and one slice of mozzarella or provolone on each sandwich. Sprinkle with Parmesan, if desired, then cover with the remaining bread slices, buttered sides facing outward.
  3. Grill the Sandwiches: Heat a large skillet or nonstick pan over medium-low heat. Place the sandwiches in the skillet and cook for about 3–5 minutes, until the bottom is golden brown and crisp. Carefully flip each sandwich using a spatula. Cook for another 3–5 minutes, pressing gently with the spatula, until the second side is golden and the cheese has melted. If the bread browns too quickly before the cheese melts, reduce the heat and cover the skillet for 1–2 minutes.
  4. Slice and Serve: Transfer the sandwiches to a cutting board and let them rest for 1 minute. Slice diagonally to reveal the creamy avocado and melted cheese. Serve immediately while the bread is crisp and the cheese is warm and gooey.

Notes

  • For a spicier kick, add more red pepper flakes.
  • Feel free to substitute different types of cheese based on your preference.
  • Ensure the avocado is ripe for the best flavor and creaminess.
