Ingredients
- 4 boneless, skinless chicken breasts — about 680 g
- 1 tablespoon (15 mL) olive oil
- 1 teaspoon (5 mL) salt
- ½ teaspoon (2.5 mL) black pepper
- 1 teaspoon (5 mL) garlic powder
- ½ teaspoon (2.5 mL) Italian seasoning
- 450 g fresh asparagus, trimmed
- 3 cloves garlic, minced
- 2 tablespoons (30 g) unsalted butter
- 1 cup (240 mL) heavy cream
- ½ cup (120 mL) chicken broth
- ½ cup (50 g) grated Parmesan cheese
- ½ cup (50 g) shredded mozzarella cheese
- ½ teaspoon (2.5 mL) Italian seasoning
- ¼ teaspoon (1.25 mL) red pepper flakes, optional
- 1 tablespoon (15 mL) lemon juice
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat the oven: Set the oven to 400°F (200°C). Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish.
- Season the chicken: Pat the chicken breasts dry. Rub with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Arrange the dish: Place the chicken breasts in the baking dish and arrange the asparagus around them.
- Make the creamy sauce: Melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 30 seconds. Pour in the heavy cream and chicken broth. Simmer for 2–3 minutes.
- Add the cheese: Stir in the Parmesan, mozzarella, Italian seasoning, and red pepper flakes. Cook until the cheese melts and the sauce is smooth. Stir in the lemon juice.
- Pour over the chicken: Pour the creamy sauce evenly over the chicken and asparagus.
- Bake: Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling.
- Broil for a golden top: If desired, broil for 1–2 minutes until the cheese is lightly golden. Watch closely.
- Rest and serve: Let the chicken rest for 5 minutes. Garnish with fresh parsley and serve with rice, mashed potatoes, pasta, or crusty bread.
