Ingredients

  • 4 boneless, skinless chicken breasts — about 680 g
  • 1 tablespoon (15 mL) olive oil
  • 1 teaspoon (5 mL) salt
  • ½ teaspoon (2.5 mL) black pepper
  • 1 teaspoon (5 mL) garlic powder
  • ½ teaspoon (2.5 mL) Italian seasoning
  • 450 g fresh asparagus, trimmed
  • 3 cloves garlic, minced
  • 2 tablespoons (30 g) unsalted butter
  • 1 cup (240 mL) heavy cream
  • ½ cup (120 mL) chicken broth
  • ½ cup (50 g) grated Parmesan cheese
  • ½ cup (50 g) shredded mozzarella cheese
  • ½ teaspoon (2.5 mL) Italian seasoning
  • ¼ teaspoon (1.25 mL) red pepper flakes, optional
  • 1 tablespoon (15 mL) lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven: Set the oven to 400°F (200°C). Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish.
  2. Season the chicken: Pat the chicken breasts dry. Rub with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  3. Arrange the dish: Place the chicken breasts in the baking dish and arrange the asparagus around them.
  4. Make the creamy sauce: Melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 30 seconds. Pour in the heavy cream and chicken broth. Simmer for 2–3 minutes.
  5. Add the cheese: Stir in the Parmesan, mozzarella, Italian seasoning, and red pepper flakes. Cook until the cheese melts and the sauce is smooth. Stir in the lemon juice.
  6. Pour over the chicken: Pour the creamy sauce evenly over the chicken and asparagus.
  7. Bake: Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling.
  8. Broil for a golden top: If desired, broil for 1–2 minutes until the cheese is lightly golden. Watch closely.
  9. Rest and serve: Let the chicken rest for 5 minutes. Garnish with fresh parsley and serve with rice, mashed potatoes, pasta, or crusty bread.
