Ingredients

  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 cup fresh spinach
  • 5 ounces Boursin cheese (garlic and herb flavor)
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add the cherry tomatoes and asparagus to the skillet. Sauté for another 3-4 minutes until the vegetables are tender but still crisp.
  4. Reduce the heat to low and stir in the spinach, allowing it to wilt for about 1 minute.
  5. Add the Boursin cheese and chicken broth to the skillet, stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Toss the cooked penne pasta into the skillet, mixing well to coat the pasta with the sauce.
  7. Sprinkle with grated Parmesan cheese and adjust seasoning if necessary. Serve warm, garnished with fresh basil if desired.

  • For a lighter version, substitute the Boursin cheese with a low-fat cream cheese or Greek yogurt.
