Ingredients

3 cups uncooked wide egg noodles

4 cups broccoli florets (fresh or frozen)

2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)

2 cans (10.5 oz each) condensed cream of chicken soup

½ teaspoon garlic powder

⅓ cup chopped scallions (green onions)

2 cups grated cheddar cheese, divided

Instructions

Preheat oven: Preheat the oven to 375°F (190°C) and position the rack in the center.

Cook noodles and broccoli: Boil the egg noodles in salted water for 1 minute less than package instructions. During the last 2 minutes of cooking, add broccoli florets to the pot. Drain both together and set aside.

Mix casserole base: In a 9×13-inch casserole dish, combine the cooked noodles and broccoli with chicken, cream of chicken soup, sour cream, garlic powder, scallions, and 1 cup of the cheddar cheese. Stir everything until well mixed and smooth the mixture into an even layer.

Add cheese topping: Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.

Bake: Cover the casserole with foil and bake for 25 to 30 minutes, or until hot and bubbly.

Optional broil: For a golden cheesy crust, remove the foil and broil for an additional 2 to 3 minutes.
