Description

Creamy, cheesy, and packed with comforting flavor, this Chicken Noodle Casserole combines tender noodles, juicy chicken, and broccoli in a rich cream sauce. It’s the perfect weeknight family dinner that’s easy to make ahead and sure to please a crowd.


Ingredients

  • 3 cups uncooked wide egg noodles

  • 4 cups broccoli florets (fresh or frozen)

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)

  • 2 cans (10.5 oz each) condensed cream of chicken soup

  • ½ cup sour cream

  • ½ teaspoon garlic powder

  • ⅓ cup chopped scallions (green onions)

  • 2 cups grated cheddar cheese, divided

  • Salt and pepper, to taste


Instructions

  • Preheat oven: Preheat the oven to 375°F (190°C) and position the rack in the center.

  • Cook noodles and broccoli: Boil the egg noodles in salted water for 1 minute less than package instructions. During the last 2 minutes of cooking, add broccoli florets to the pot. Drain both together and set aside.

  • Mix casserole base: In a 9×13-inch casserole dish, combine the cooked noodles and broccoli with chicken, cream of chicken soup, sour cream, garlic powder, scallions, and 1 cup of the cheddar cheese. Stir everything until well mixed and smooth the mixture into an even layer.

  • Add cheese topping: Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.

  • Bake: Cover the casserole with foil and bake for 25 to 30 minutes, or until hot and bubbly.

  • Optional broil: For a golden cheesy crust, remove the foil and broil for an additional 2 to 3 minutes.

 

  • Serve: Remove from the oven, season with salt and pepper to taste, and serve warm.

Notes

  • Fresh or frozen broccoli both work well—just be sure to blanch or boil it briefly to keep it tender-crisp.

  • You can substitute cream of mushroom or cream of celery soup for variety.

  • Make this dish ahead by assembling it fully (before baking) and storing it in the fridge for up to 2 days or freezing for up to 3 months. Thaw before baking.

  • Add a crunchy topping with crushed Ritz crackers or seasoned breadcrumbs before baking for extra texture.
