Description

A deliciously creamy cheesecake infused with the flavors of cinnamon rolls, featuring a swirled cinnamon sugar topping.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent water from seeping in during baking.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of granulated sugar and vanilla extract, mixing until fully incorporated.
  4. Add the eggs, one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  5. Stir in the sour cream until smooth.
  6. In a small bowl, mix together the ground cinnamon and brown sugar.
  7. Pour half of the cheesecake batter over the crust in the springform pan. Sprinkle half of the cinnamon sugar mixture over the batter. Pour the remaining cheesecake batter on top, then sprinkle the rest of the cinnamon sugar mixture. Use a knife to gently swirl the cinnamon sugar into the batter for a marbled effect.
  8. Place the springform pan in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the springform pan (this creates a water bath).
  9. Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  10. Remove the cheesecake from the water bath and refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the cream cheese mixture.
  • You can also top the cheesecake with a drizzle of caramel sauce or a sprinkle of chopped pecans for added texture and sweetness.
