Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1½ cups cottage cheese
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook for 5–7 minutes until lightly browned and nearly cooked through.
  3. Sauté the vegetables: Add the mushrooms and cook for 4–5 minutes until softened. Stir in the garlic and cook for 30 seconds. Add the spinach and cook until wilted.
  4. Make the creamy sauce: In a large bowl, combine cottage cheese, sour cream, heavy cream, Italian seasoning, onion powder, lemon juice, and red pepper flakes. Stir until well combined.
  5. Combine: Add the cooked chicken and mushroom-spinach mixture to the creamy cottage cheese sauce. Mix gently.
  6. Assemble: Transfer everything to the prepared baking dish. Sprinkle mozzarella and Parmesan evenly over the top.
  7. Bake uncovered for 25–30 minutes, until bubbling and golden around the edges.
  8. Let the casserole rest for 5–10 minutes before serving.
