Description
Tender chicken wrapped in thin zucchini slices, filled with creamy garlic Parmesan chicken and baked in a rich, cheesy sauce. A delicious low-carb comfort meal that’s both satisfying and easy to make.
Ingredients
- 500 g boneless, skinless chicken breast
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- 2 cloves garlic, minced
- 30 g unsalted butter
- 3 cloves garlic, minced
- 240 ml heavy cream
- 80 g grated Parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- 3–4 medium zucchini
- 150 g shredded mozzarella cheese
- 2 tbsp chopped fresh parsley
- Extra Parmesan, for topping
Instructions
- Slice the zucchini lengthwise into very thin strips using a mandoline or vegetable peeler. You’ll need about 12–15 strips. Thin slices are easier to roll.
- Cut the chicken into small pieces. Season with salt, pepper, Italian seasoning, oregano, and garlic.
- Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5–7 minutes, stirring occasionally, until cooked through. Set aside.
- Melt the butter in the same skillet. Add the minced garlic and sauté for about 30 seconds.
- Pour in the heavy cream and bring to a gentle simmer. Cook for about 4–5 minutes, stirring occasionally.
- Gradually whisk in the Parmesan until melted and the sauce becomes creamy. Season with Italian seasoning, salt, and pepper.
- Pour about half of the sauce over the cooked chicken and stir until well coated.
- Preheat the oven to 190°C and lightly grease a baking dish.
- Lay the zucchini strips flat. Place about 2–3 tablespoons of the creamy chicken mixture near one end of each strip. Roll tightly and place seam-side down in the baking dish.
- Pour the remaining creamy garlic sauce over the zucchini roll-ups.
- Sprinkle generously with mozzarella and a little Parmesan.
- Bake uncovered for 25 minutes, or until the zucchini is tender, the sauce is bubbling, and the cheese is melted and golden.
- Let the roll-ups rest for 5–10 minutes. Garnish with fresh parsley and extra Parmesan.
Notes
- Don’t make the zucchini slices too thick—thin strips roll much more easily.
- If the zucchini releases lots of water, pat the slices dry before assembling.
- Add spinach, mushrooms, or sun-dried tomatoes to the chicken filling for extra flavor.
- For a lower-carb meal, serve with a simple green salad or roasted vegetables.
