Ingredients
- 1 large head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- ½ cup whole milk
- ½ cup chicken or vegetable broth
- ¾ cup freshly grated Parmesan cheese
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt, to taste
- 2 tablespoons chopped fresh parsley (for garnish)
- Extra Parmesan cheese (for garnish)
- Red pepper flakes (optional, for garnish)
Instructions
- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower with olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
- Spread the cauliflower into a single layer on the baking sheet.
- Roast for 25–30 minutes, turning halfway through, until the edges are golden brown and slightly crispy.
- While the cauliflower is roasting, melt the butter in a skillet over medium heat.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth, heavy cream, and milk.
- Cook for 3–5 minutes, stirring constantly, until the sauce is slightly thickened.
- Add the Parmesan cheese, paprika, cayenne (if using), and black pepper. Stir until smooth.
- Taste and adjust the salt as needed.
- Add the roasted cauliflower to the skillet and gently toss until every floret is coated in the creamy Parmesan sauce.
- Cook for another 2–3 minutes.
- Top with fresh parsley, extra Parmesan, and red pepper flakes if desired. Serve immediately.

- For a vegetarian option, use vegetable broth instead of chicken broth.
- Adjust the amount of cayenne pepper based on your spice preference.
