Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ cup chicken or vegetable broth
  • ¾ cup freshly grated Parmesan cheese
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Salt, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the cauliflower with olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  4. Spread the cauliflower into a single layer on the baking sheet.
  5. Roast for 25–30 minutes, turning halfway through, until the edges are golden brown and slightly crispy.
  6. While the cauliflower is roasting, melt the butter in a skillet over medium heat.
  7. Add the minced garlic and cook for about 30 seconds until fragrant.
  8. Whisk in the flour and cook for 1 minute.
  9. Gradually whisk in the chicken broth, heavy cream, and milk.
  10. Cook for 3–5 minutes, stirring constantly, until the sauce is slightly thickened.
  11. Add the Parmesan cheese, paprika, cayenne (if using), and black pepper. Stir until smooth.
  12. Taste and adjust the salt as needed.
  13. Add the roasted cauliflower to the skillet and gently toss until every floret is coated in the creamy Parmesan sauce.
  14. Cook for another 2–3 minutes.
  15. Top with fresh parsley, extra Parmesan, and red pepper flakes if desired. Serve immediately.
