Description
A refreshing and creamy salad featuring cucumbers and charred corn, perfect for summer gatherings.
Ingredients
- 4 cups cucumbers, diced
- 3 cups corn kernels, fresh or frozen
- ½ cup red onion, finely diced
- ½ cup fresh cilantro, chopped
- ½ cup crumbled cotija cheese or feta cheese
- 1 jalapeño, finely diced, optional
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 clove garlic, minced
- ½ tsp chili powder
- ½ tsp smoked paprika
- ¼ tsp ground cumin
- ½ tsp salt
- ¼ tsp black pepper
- Extra cotija or feta cheese for garnishing
- Fresh cilantro for garnishing
- Lime wedges for serving
- Sprinkle of chili powder for garnishing
Instructions
- Char the corn: Heat a large skillet over medium-high heat. Add the corn and cook for 4–5 minutes, stirring occasionally, until lightly browned and charred in spots. Remove from the heat and let cool.
- Prepare the vegetables: Add the diced cucumbers, red onion, cilantro, and jalapeño to a large bowl.
- Make the dressing: In a separate bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, garlic, chili powder, smoked paprika, cumin, salt, and black pepper until smooth.
- Combine: Add the cooled corn to the cucumber mixture. Pour the dressing over everything and gently toss until evenly coated.
- Add the cheese: Fold in the cotija or feta cheese, reserving a little for topping.
- Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
- Serve: Sprinkle with extra cheese, cilantro, and a light dusting of chili powder. Serve with fresh lime wedges.
Notes
- For the best crunch, use English cucumbers or firm fresh cucumbers.
- Let the corn cool before adding the creamy dressing.
- If you prefer more heat, add extra jalapeño or a pinch of cayenne.
- For a lighter dressing, replace half of the mayonnaise with Greek yogurt.
- This salad is best served the same day, while the cucumbers are fresh.
