A creamy and delicious vegetable casserole that combines a variety of vegetables with a rich sauce and a crunchy topping, perfect for a comforting meal.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup frozen green beans
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup crushed buttery crackers
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add the broccoli, cauliflower, and carrots. Cook for 3–4 minutes, then drain well.
  3. Melt 2 tablespoons butter in a skillet over medium heat. Add the onion and cook for 3 minutes. Add the garlic and cook for another 30 seconds.
  4. In a large bowl, whisk together the cream of mushroom soup, sour cream, milk, garlic powder, onion powder, black pepper, and salt.
  5. Add the cooked vegetables, green beans, and sautéed onion mixture. Stir until everything is evenly coated.
  6. Fold in ½ cup cheddar cheese, then transfer the mixture to the prepared baking dish.
  7. Sprinkle the remaining ½ cup cheddar cheese over the top.
  8. Combine the crushed crackers, melted butter, and Parmesan cheese. Sprinkle evenly over the casserole.
  9. Bake uncovered for 25–30 minutes, until bubbly and golden brown.
  10. Let rest for 5 minutes before serving.
