Ingredients

  • 2 medium zucchini, sliced into ¼-inch rounds
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly brush with olive oil.
  2. Remove excess moisture: Arrange the zucchini slices on paper towels, sprinkle lightly with salt, and let them sit for 10–15 minutes. Pat them very dry.
  3. In one bowl, whisk the eggs. In another, combine the breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, and black pepper.
  4. Lightly coat each zucchini slice with flour, dip into the beaten egg, then press firmly into the Parmesan-breadcrumb mixture.
  5. Arrange the zucchini in a single layer, leaving space between each piece. Drizzle or lightly spray with olive oil.
  6. Bake for 15–20 minutes, flipping halfway through, until golden and crispy.
  7. Sprinkle the mozzarella over the zucchini during the final 2–3 minutes of baking. Return to the oven until the cheese is melted and bubbly.
  8. For extra crispiness, broil for 1–2 minutes, watching closely so the cheese doesn’t burn.
  9. Serve immediately while hot and crispy.
