Ingredients
- 2 medium zucchini, shredded
- 1 tsp salt
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- ½ cup breadcrumbs
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- 1 tsp Italian seasoning
- ½ tsp black pepper
- ¼ tsp onion powder
- 2 tbsp all-purpose flour
- 2 tbsp olive oil, plus more as needed for frying
Instructions
- Prepare the zucchini: Shred the zucchini and toss with 1 teaspoon salt. Let it sit for 10 minutes, then squeeze out as much excess liquid as possible using a clean kitchen towel or paper towels.
- Make the mixture: In a large bowl, combine the zucchini, mozzarella, Parmesan, eggs, breadcrumbs, garlic, parsley, basil, Italian seasoning, black pepper, onion powder, and flour. Mix until well combined.
- Shape the patties: Scoop about 2–3 tablespoons of the mixture and form into small, flattened patties. If the mixture feels too wet, add another tablespoon or two of breadcrumbs.
- Heat the pan: Heat the olive oil in a large skillet over medium heat.
- Cook: Place the patties in the hot skillet without overcrowding. Cook for about 3–4 minutes per side, or until golden brown and crispy.
- Drain: Transfer the cooked patties to a paper towel-lined plate to remove excess oil.
- Serve: Serve hot with ranch dressing, garlic aioli, sour cream, or your favorite dipping sauce.

- For extra-crispy patties, refrigerate the shaped patties for 15–20 minutes before frying and avoid flipping them too early.
