Description
Crispy Fried Cabbage and Potatoes is a delicious and hearty dish that combines tender cabbage and crispy potatoes, seasoned to perfection.
Ingredients
- 1½ lbs (680 g) Yukon Gold or Russet potatoes, diced into ½-inch cubes
- ½ medium green cabbage (about 1½ lbs/680 g), chopped
- 1 medium yellow onion, sliced
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- 2 tbsp chopped fresh parsley (for garnish)
- 2 green onions, sliced (for garnish)
- ¼ cup grated Parmesan cheese (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Heat 2 tablespoons olive oil in a large cast-iron skillet or heavy-bottomed skillet over medium-high heat.
- Add the diced potatoes in a single layer and cook for 12–15 minutes, stirring only occasionally, until the potatoes are golden brown and nearly tender. Transfer the potatoes to a plate.
- Reduce the heat to medium, add the remaining 1 tablespoon olive oil and the butter to the skillet. Add the onion and cook for 4–5 minutes, until softened. Stir in the garlic and cook for 30 seconds.
- Add the chopped cabbage and cook for 8–10 minutes, stirring occasionally, until tender with lightly caramelized edges.
- Sprinkle in the smoked paprika, garlic powder, onion powder, Italian seasoning, salt, black pepper, and crushed red pepper flakes (if using). Stir well to coat the vegetables evenly.
- Return the crispy potatoes to the skillet, toss everything together and cook for 3–5 minutes, allowing the flavors to blend and the potatoes to crisp up again.
- Transfer to a serving dish and garnish with fresh parsley, sliced green onions, and grated Parmesan cheese (optional). Serve with lemon wedges if desired.
Notes
- For a spicier version, increase the amount of crushed red pepper flakes.
- This dish can be served as a side or a main course.
