Description
Crispy Parmesan Zucchini & Potato Cups are a delicious and healthy snack that combines the flavors of zucchini and potatoes with the richness of Parmesan cheese, baked to perfection for a crispy texture.
Ingredients
- 2 medium potatoes — about 400 g, peeled and grated
- 1 medium zucchini — about 200 g, grated
- ½ cup (50 g) grated Parmesan cheese
- 1 large egg
- 2 tablespoons (16 g) all-purpose flour
- 2 cloves garlic, minced
- ½ teaspoon (2.5 mL) salt
- ¼ teaspoon (1.25 mL) black pepper
- ½ teaspoon (2.5 mL) Italian seasoning
- 2 tablespoons (30 mL) olive oil
- 2 tablespoons (15 g) shredded mozzarella, optional
- 2 tablespoons chopped green onions or chives, for garnish
Instructions
- Prepare the vegetables: Grate the potatoes and zucchini. Place them separately in a clean kitchen towel and squeeze out as much moisture as possible. The drier they are, the crispier the cups will be.
- Make the mixture: In a large bowl, combine the grated potatoes, zucchini, Parmesan, egg, flour, garlic, salt, pepper, and Italian seasoning. Mix until evenly combined.
- Prepare the muffin tin: Preheat the oven to 425°F (220°C). Generously grease a 12-cup muffin tin with olive oil or cooking spray.
- Form the cups: Divide the mixture among the muffin cups. Press the mixture firmly against the bottom and sides of each cup, creating a small hollow in the center.
- Bake: Brush or drizzle the tops with the remaining olive oil. Bake for 20–25 minutes, until the potato edges are deeply golden and crispy.
- Add cheese: If using mozzarella, sprinkle a little into the centers during the last 3–5 minutes of baking.
- Cool slightly: Let the cups rest in the muffin tin for 5 minutes, then carefully loosen them with a small spatula.
- Garnish and serve: Sprinkle with chopped green onions or chives and serve warm.
Notes
- For the extra-crispy edges shown in the photo, squeeze the grated potato and zucchini very thoroughly and don’t overcrowd the muffin cups.
