Description

Crispy Zucchini Patties are a delicious and healthy snack made from grated zucchini, eggs, and Parmesan cheese, served with a creamy garlic dip.

Ingredients

  • 2 medium zucchini, grated (about 3 cups)
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • 2 green onions, finely sliced
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika (optional)
  • 3–4 tablespoons olive oil or vegetable oil, for frying
  • ½ cup sour cream
  • 1 tablespoon mayonnaise
  • 1 clove garlic, finely minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley or dill
  • Salt and black pepper, to taste

Instructions

  1. Grate the zucchini. Wash the zucchini and grate using the large holes of a box grater. Place the grated zucchini in a bowl and sprinkle with the salt. Let it sit for 10 minutes to draw out excess moisture.
  2. Remove excess moisture. Transfer the zucchini to a clean kitchen towel or cheesecloth. Squeeze firmly until as much liquid as possible has been removed. This is the key to crispy patties.
  3. Make the mixture. In a large bowl, combine the drained zucchini, eggs, flour, Parmesan cheese, green onions, garlic, black pepper, Italian seasoning, and paprika. Mix until evenly combined.
  4. Heat the oil. Add 2 tablespoons of oil to a large skillet and heat over medium heat.
  5. Shape the patties. Scoop about 2 tablespoons of the mixture per patty. Place them in the skillet and gently flatten with the back of a spoon. Work in batches to avoid overcrowding.
  6. Fry until golden. Cook for 3–4 minutes on each side, until the patties are golden brown and cooked through. Add more oil between batches as needed.
  7. Drain the patties. Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
  8. Prepare the dip. In a small bowl, combine the sour cream, mayonnaise, garlic, lemon juice, parsley or dill, salt, and black pepper. Stir until smooth.
  9. Serve. Serve the zucchini patties warm with the creamy garlic dip on the side.

Notes

  • Ensure to remove as much moisture from the zucchini as possible for crispy patties.
  • Feel free to customize the dip with your favorite herbs.
  • These patties can be baked instead of fried for a healthier option.
