Description

A refreshing and crunchy salad made with green and purple cabbage, carrots, and a delicious honey mustard dressing.

Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup purple cabbage, finely shredded
  • 2 medium carrots, peeled and grated
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons sunflower seeds, optional
  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Prepare the vegetables. Remove any tough outer cabbage leaves. Thinly shred the green and purple cabbage, grate the carrots, and slice the red onion.
  2. Make the dressing. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, olive oil, lemon juice, garlic powder, salt, and black pepper until smooth.
  3. Combine the salad. Place the shredded cabbage, carrots, red onion, and parsley in a large mixing bowl. Toss gently to distribute the vegetables evenly.
  4. Add the dressing. Pour the honey mustard dressing over the vegetables. Toss thoroughly until everything is lightly coated.
  5. Chill for flavor. Refrigerate for 10–15 minutes to allow the flavors to blend while keeping the vegetables crisp.
  6. Finish and serve. Sprinkle with sunflower seeds, if desired. Toss once more and serve chilled.

Notes

  • Slice the cabbage thinly for easier eating and better dressing coverage.
  • Add the dressing shortly before serving for a firmer texture.
  • Adjust sweetness by adding more honey or vinegar as desired.
  • Substitute Greek yogurt for some or all of the mayonnaise for a creamier or lighter dressing.
  • Consider adding chopped apples, toasted almonds, or pumpkin seeds for extra crunch.
  • Store undressed vegetables and dressing separately in airtight containers for up to 3 days; dressed salad is best within 24 hours.
