Crunchy Sesame Ginger Chicken Slaw is a refreshing and flavorful dish that combines tender chicken with a variety of crunchy vegetables and a zesty sesame ginger dressing.
Ingredients
- 500 g boneless, skinless chicken breasts
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- ½ tsp black pepper
- 400 g green or Napa cabbage, finely shredded
- 100 g carrots, shredded
- 60 g red cabbage, finely shredded
- 3 green onions, thinly sliced
- 30 g toasted sesame seeds
- 15 g fresh cilantro, chopped, optional
- 2 tbsp soy sauce (for dressing)
- 2 tbsp rice vinegar
- 1½ tbsp honey
- 1 tbsp toasted sesame oil
- 1 tbsp neutral oil
- 1 tbsp fresh ginger, finely grated
- 1 clove garlic, minced (for dressing)
- 1 tbsp lime juice
- ½ tsp chili flakes or Sriracha, optional
Instructions
- Slice the chicken into thin strips. Toss with soy sauce, sesame oil, ginger, garlic, and black pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Cook the chicken for 5–7 minutes, stirring occasionally, until golden and cooked through. Set aside to cool slightly.
- In a large bowl, combine the green cabbage, red cabbage, carrots, and green onions.
- Whisk together the soy sauce, rice vinegar, honey, sesame oil, neutral oil, ginger, garlic, lime juice, and chili flakes until well combined.
- Pour the dressing over the vegetables and toss thoroughly.
- Add the cooked chicken and toss gently until everything is evenly coated.
- Sprinkle with toasted sesame seeds and fresh cilantro.
- For the best flavor, refrigerate for 10–15 minutes before serving. Keep the dressing separate if preparing the slaw ahead of time so the vegetables stay crunchy.

- Add crushed roasted peanuts or cashews for extra crunch.
- Add sliced cucumber or bell peppers.
- Use rotisserie chicken for a quick version.
- Add crispy chow mein noodles or wonton strips just before serving.
- Toast the sesame seeds in a dry skillet over medium heat for 2–3 minutes until fragrant and lightly golden for a deeper nutty flavor.
