Ingredients

  • 4 large ripe tomatoes, sliced ¼-inch thick
  • 1 tsp salt, plus more to taste
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese, divided
  • 2 cloves garlic, minced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ¼ tsp onion powder
  • 2 green onions, thinly sliced

Instructions

  1. Prepare the tomatoes: Arrange the tomato slices on a paper towel-lined baking sheet. Sprinkle lightly with salt and let them sit for 20–30 minutes. Pat them very dry with additional paper towels. This helps prevent a watery pie.
  2. Preheat the oven: Heat oven to 375°F. Lightly grease a 9-inch pie dish.
  3. Make the cheese mixture: In a bowl, combine mayonnaise, sour cream, mozzarella, cheddar, ¼ cup Parmesan, garlic, basil, parsley, Italian seasoning, black pepper, and onion powder.
  4. Layer: Arrange half of the tomatoes in the pie dish. Sprinkle with half of the green onions, then spread half of the cheese mixture over the tomatoes.
  5. Add the remaining tomato slices and green onions. Spread the remaining cheese mixture evenly over the top.
  6. Add Parmesan: Sprinkle the remaining ¼ cup Parmesan over the surface.
  7. Bake: Bake uncovered for 30–35 minutes, until the tomatoes are tender and the cheese is bubbling and golden.
  8. Broil for extra color: If desired, broil for 1–2 minutes at the end, watching carefully until the top is beautifully golden.
  9. Rest: Let the pie cool for 10–15 minutes before slicing. This allows the cheese to set slightly and makes it easier to serve.
