Description
A rich and creamy cheesecake layered with cherry pie filling and topped with whipped cream and chocolate shavings.
Ingredients
- 2 cups chocolate graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1 cup cherry pie filling
- 1/2 cup semi-sweet chocolate chips
- Whipped cream, for topping
- Chocolate shavings, for garnish
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine the chocolate graham cracker crumbs and melted butter. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.
- Add the vanilla extract and mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Mix in the sour cream and flour until just combined, being careful not to overmix.
- Pour half of the cheesecake batter over the cooled crust. Spoon half of the cherry pie filling over the batter, then gently swirl with a knife. Pour the remaining cheesecake batter on top and finish with the rest of the cherry pie filling, swirling again if desired.
- Sprinkle the semi-sweet chocolate chips on top of the cheesecake.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, top with whipped cream and chocolate shavings for garnish.
Notes
- For a richer chocolate flavor, substitute regular chocolate graham crackers with double chocolate graham crackers.
- You can use fresh cherries instead of cherry pie filling for a fresher taste; just pit and slice them before adding to the cheesecake.
