Description

A rich and indulgent dessert combining chocolate brownie, cherry filling, and creamy chocolate pudding, topped with whipped cream and chocolate shavings.

Ingredients

  • 1 box chocolate fudge brownie mix
  • Ingredients called for on the brownie mix package
  • ½ cup chocolate chips
  • 1 can (595 g) cherry pie filling
  • 2 tablespoons cherry juice or syrup
  • 1 package (102 g) instant chocolate pudding mix
  • 480 ml cold milk
  • 240 ml heavy whipping cream
  • 30 g powdered sugar
  • 1 teaspoon vanilla extract
  • 60 g chocolate shavings or mini chocolate chips
  • Maraschino cherries, for garnish

Instructions

  1. Preheat oven according to the brownie mix directions. Prepare the brownie batter and fold in the chocolate chips.
  2. Pour into a greased 23 × 33 cm (9 × 13-inch) baking pan and bake according to the package directions. Don’t overbake—the center should remain moist and fudgy.
  3. Whisk the chocolate pudding mix with cold milk for about 2 minutes, then let it thicken.
  4. While the brownie cake is still slightly warm, use the handle of a wooden spoon to poke holes throughout the cake, spacing them about 2–3 cm apart.
  5. Mix the cherry pie filling with the cherry juice. Spoon it over the cake, gently pushing some of the cherries and sauce into the holes.
  6. Spread the prepared chocolate pudding evenly over the cherry layer.
  7. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  8. Spread the whipped cream over the chilled cake.
  9. Sprinkle with chocolate shavings or mini chocolate chips and add maraschino cherries.
  10. Refrigerate for at least 2 hours, preferably overnight, so the layers can set and the brownie absorbs the cherry and pudding flavors.

Notes

  • Poke cakes benefit from chilling after the filling is added.
  • For best results, do not overbake the brownie layer.
  • Feel free to customize toppings with your favorite chocolate or fruit.
