Description
A refreshing and healthy Detox Cucumber Chickpea Salad, perfect for a light meal or side dish.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 medium cucumbers, diced
- 1½ cups cherry tomatoes, halved
- ½ medium red onion, finely diced
- 1 medium red bell pepper, diced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped (optional)
- ½ cup crumbled feta cheese (optional)
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- ½ teaspoon dried oregano
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
Instructions
- Prepare the chickpeas. Drain and rinse the canned chickpeas under cold water. Pat them dry to help the dressing cling better.
- Chop the vegetables. Dice the cucumbers and bell pepper, halve the cherry tomatoes, and finely chop the red onion, parsley, and mint.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and black pepper.
- Combine the salad. Add the chickpeas, cucumbers, tomatoes, bell pepper, red onion, and fresh herbs to a large bowl.
- Toss with dressing. Pour the lemon dressing over the salad and gently toss until everything is evenly coated.
- Add the finishing touch. Sprinkle with crumbled feta, if desired. Refrigerate for 15–20 minutes to allow the flavors to develop.
- Serve chilled. Toss once more before serving and add extra lemon juice or fresh parsley to taste.
Notes
- For extra crunch: Use firm cucumbers and add the dressing shortly before serving.
- For more protein: Add grilled chicken or serve with hard-boiled eggs.
- For a vegan version: Simply leave out the feta cheese.
- For extra flavor: Add diced avocado or a handful of Kalamata olives.
- Storage: Refrigerate in an airtight container for up to 3 days. If preparing ahead, keep the dressing separate and add it just before serving for the freshest texture.
