A delicious Double-Crust Brown Butter Peach Cobbler that combines the rich flavor of brown butter with sweet peaches, all encased in a flaky double crust.
Ingredients
- 6 cups fresh or frozen peaches, sliced
- ¾ cup granulated sugar
- ¼ cup packed brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- ¾ cup cold unsalted butter, cubed
- ½ cup cold buttermilk

- 1 tablespoon melted butter (for brushing)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
- Preheat the oven: Set oven to 375°F. Grease a 9 × 13-inch baking dish.
- Brown the butter: Melt ½ cup butter in a saucepan over medium heat. Cook for 4–6 minutes, stirring frequently, until golden brown and nutty-smelling. Remove from heat and let cool slightly.
- Prepare the filling: In a large bowl, combine peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Stir well.
- Make the crust: Whisk flour, sugar, baking powder, and salt in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in buttermilk and vanilla until a soft dough forms.
- Assemble the bottom crust: Roll out half of the dough and place it in the bottom of the prepared baking dish. Pour the peach mixture evenly over the crust.
- Add brown butter: Drizzle the browned butter evenly over the peaches.
- Add the top crust: Roll out the remaining dough and place it over the peaches. Pinch the edges to seal and cut several small slits in the top for steam to escape.
- Finish: Brush the top crust with melted butter and sprinkle with granulated sugar.
- Bake: Bake for 45–55 minutes, until the crust is deeply golden and the peach filling is bubbling around the edges.
- Cool and serve: Let the cobbler rest for 20–30 minutes before serving. Enjoy warm with vanilla ice cream.
