Ingredients

  • 6 cups fresh or frozen peaches, sliced
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup unsalted butter (for browning)
  • 2½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ¾ cup cold unsalted butter, cubed
  • ½ cup cold buttermilk

  • 1 tablespoon melted butter (for brushing)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven: Set oven to 375°F. Grease a 9 × 13-inch baking dish.
  2. Brown the butter: Melt ½ cup butter in a saucepan over medium heat. Cook for 4–6 minutes, stirring frequently, until golden brown and nutty-smelling. Remove from heat and let cool slightly.
  3. Prepare the filling: In a large bowl, combine peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Stir well.
  4. Make the crust: Whisk flour, sugar, baking powder, and salt in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in buttermilk and vanilla until a soft dough forms.
  5. Assemble the bottom crust: Roll out half of the dough and place it in the bottom of the prepared baking dish. Pour the peach mixture evenly over the crust.
  6. Add brown butter: Drizzle the browned butter evenly over the peaches.
  7. Add the top crust: Roll out the remaining dough and place it over the peaches. Pinch the edges to seal and cut several small slits in the top for steam to escape.
  8. Finish: Brush the top crust with melted butter and sprinkle with granulated sugar.
  9. Bake: Bake for 45–55 minutes, until the crust is deeply golden and the peach filling is bubbling around the edges.
