Description

A quick and delicious recipe for Easy Egg Roll Stir Fry that combines ground pork, fresh vegetables, and a flavorful sauce.

Ingredients

  • 1 pound ground pork
  • 1 tablespoon olive oil or sesame oil
  • 1 small yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 medium head green cabbage, thinly shredded (about 6 cups)
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 1 tablespoon sesame seeds (optional)
  • Extra sliced green onions (optional)
  • Sriracha or chili crisp (optional)
  • Crispy wonton strips (optional)

Instructions

  1. Prepare the sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or brown sugar, black pepper, and red pepper flakes if using. Set aside.
  2. Cook the pork. Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground pork and cook for 5–7 minutes, breaking it into small crumbles, until browned and fully cooked.
  3. Add the aromatics. Stir in the sliced onion, garlic, and ginger. Cook for 1–2 minutes until fragrant and the onion begins to soften.
  4. Add the vegetables. Add the shredded cabbage and carrots. Toss everything together and stir-fry for 4–6 minutes, until the cabbage softens slightly but still has a little crunch.
  5. Pour in the sauce. Add the prepared sauce and toss thoroughly to coat the meat and vegetables. Cook for another 2–3 minutes, allowing the flavors to combine.
  6. Finish with green onions. Stir in most of the sliced green onions, reserving some for garnish. Taste and adjust the seasoning if needed.
  7. Serve. Sprinkle with sesame seeds and the remaining green onions. Serve hot on its own, over steamed rice, or with cauliflower rice for a lower-carbohydrate option.

Notes

  • Keep the cabbage slightly crisp: Avoid cooking it too long so it doesn’t become watery.
  • Use pre-shredded coleslaw mix: A bag of cabbage and carrots saves time.
  • Brown the meat properly: Let the pork sit undisturbed briefly before stirring to develop more flavor.
  • Adjust the sauce: Add a splash of soy sauce for saltiness or a little honey for sweetness.
  • Make it spicy: Add sriracha, chili garlic sauce, or extra red pepper flakes.
