Description

A delicious and nutritious Easy High-Protein Turkey Zucchini Casserole that combines lean ground turkey, fresh zucchini, and a blend of cheeses for a satisfying meal.

Ingredients

  • 1 1/2 lb lean ground turkey
  • 3 medium zucchini, sliced into half-moons
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt, or to taste
  • 1/4 tsp ground black pepper
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley, optional

Instructions

  1. Preheat your oven to 375°F. Lightly grease a 9 × 13-inch baking dish with cooking spray or olive oil.
  2. Wash the zucchini and slice them into half-moons about 1/4 inch thick. If the zucchini seems especially watery, sprinkle the slices lightly with salt and let them sit for 10 minutes. Pat them dry with paper towels.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook for 5–7 minutes, breaking it apart until browned and cooked through.
  4. Add the diced onion and cook for another 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Add the drained diced tomatoes, Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Stir well and simmer for 2–3 minutes.
  6. Stir the plain Greek yogurt into the turkey mixture until evenly combined.
  7. Spread the sliced zucchini evenly in the prepared baking dish. Spoon the seasoned turkey mixture over the zucchini and gently stir to distribute.
  8. Sprinkle the mozzarella, cheddar, and Parmesan cheese evenly over the top.
  9. Bake uncovered for 25–30 minutes, until the zucchini is tender and the cheese is melted and golden. Broil for another 1–2 minutes if desired.
  10. Remove the casserole from the oven and let it rest for 5–10 minutes. Garnish with chopped fresh parsley and serve warm.

Notes

  • Remove excess moisture from zucchini to prevent a soupy casserole.
  • Use lean ground turkey for a lighter dish.
  • Drain the tomatoes to help the cheese brown effectively.
  • Slice zucchini evenly to ensure it cooks properly.
  • Use freshly shredded cheese for better melting.
  • Let the casserole rest before serving for better texture.
