A quick and tasty recipe for homemade vegetable patties that are crispy and delicious.
Ingredients
- 2 cups grated zucchini
- 1 cup grated carrot
- ½ cup finely chopped onion
- 1 cup mashed potato
- 1 large egg
- ½ cup breadcrumbs
- ¼ cup shredded cheddar cheese, optional
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 2–3 tablespoons olive oil, for frying
Instructions
- Prepare the vegetables: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This helps the patties stay crispy.
- In a large bowl, combine the zucchini, carrot, onion, mashed potato, garlic, parsley, and cheddar cheese.
- Add the egg, breadcrumbs, salt, pepper, and paprika. Mix until everything is well combined.
- Let the mixture rest for 5 minutes. If it feels too wet, add another 1–2 tablespoons breadcrumbs.
- Shape the mixture into 8–10 small patties, about ½-inch thick.
- Heat olive oil in a large skillet over medium heat.
- Fry the patties for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
Notes
- Serve the vegetable patties warm with a creamy dipping sauce made from sour cream or Greek yogurt, lemon juice, minced garlic, chopped parsley, and a pinch of salt and black pepper.
