Description

A quick and tasty recipe for homemade vegetable patties that are crispy and delicious.

Ingredients

  • 2 cups grated zucchini
  • 1 cup grated carrot
  • ½ cup finely chopped onion
  • 1 cup mashed potato
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup shredded cheddar cheese, optional
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 23 tablespoons olive oil, for frying

Instructions

  1. Prepare the vegetables: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This helps the patties stay crispy.
  2. In a large bowl, combine the zucchini, carrot, onion, mashed potato, garlic, parsley, and cheddar cheese.
  3. Add the egg, breadcrumbs, salt, pepper, and paprika. Mix until everything is well combined.
  4. Let the mixture rest for 5 minutes. If it feels too wet, add another 1–2 tablespoons breadcrumbs.
  5. Shape the mixture into 8–10 small patties, about ½-inch thick.
  6. Heat olive oil in a large skillet over medium heat.
  7. Fry the patties for 3–4 minutes per side, or until golden brown and crispy.
  8. Transfer to a paper towel-lined plate to drain excess oil.

Notes

  • Serve the vegetable patties warm with a creamy dipping sauce made from sour cream or Greek yogurt, lemon juice, minced garlic, chopped parsley, and a pinch of salt and black pepper.
