Ingredients

  • 3 cups (300 g) graham cracker crumbs
  • ¾ cup (170 g) unsalted butter, melted
  • ¾ cup (170 g) unsalted butter, softened
  • 2¼ cups (270 g) powdered sugar
  • 2 large eggs
  • 1 teaspoon (5 mL) vanilla extract
  • 1½ cups (360 mL) heavy whipping cream
  • 3 tablespoons (24 g) powdered sugar
  • 2 teaspoons (10 mL) vanilla extract
  • 2 cans (about 400 g each) crushed pineapple, well drained
  • Extra graham cracker crumbs for garnish
  • Pineapple pieces, optional for garnish
  • Whipped cream, optional for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish. Combine the graham cracker crumbs and melted butter until evenly moistened.
  2. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then cool completely.
  3. Beat the softened butter and powdered sugar until light and creamy. Add the eggs one at a time, then mix in the vanilla.
  4. Spread the filling evenly over the completely cooled crust. Bake at 350°F (175°C) for 10–12 minutes. Cool completely before adding the pineapple layer.
  5. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  6. Make sure the crushed pineapple is very well drained. Gently fold it into the whipped cream.
  7. Spread the pineapple-whipped-cream mixture evenly over the cooled filling.
  8. Sprinkle with extra graham cracker crumbs or add small pineapple pieces on top.
  9. Cover and refrigerate for at least 2 hours, preferably longer, until firm and thoroughly chilled.
  10. Cut into squares and serve cold.
