Description

Easy Pizza Enchiladas are a delicious twist on traditional enchiladas, combining the flavors of pizza with the convenience of a rolled tortilla.

Ingredients

  • 6 medium flour tortillas
  • 1 pound ground beef
  • 1 cup sliced pepperoni, divided
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup pizza sauce, plus extra if desired
  • ½ cup diced green bell pepper
  • ½ cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil, if needed
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil or parsley, optional

Instructions

  1. Preheat your oven to 375°F. Lightly grease a 9-by-13-inch baking dish.
  2. Heat a skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it into crumbles, until browned. Drain excess grease.
  3. Stir in the diced onion and bell pepper. Cook for 3–4 minutes until softened. Add the garlic, Italian seasoning, garlic powder, onion powder, and black pepper. Cook for another 30 seconds.
  4. Remove the skillet from the heat. Stir in ½ cup of the pizza sauce, ½ cup of the mozzarella, and about half of the sliced pepperoni.
  5. Spoon the beef mixture evenly into the center of each tortilla. Roll each tortilla tightly and place it seam-side down in the prepared baking dish.
  6. Spread the remaining pizza sauce over the rolled tortillas, making sure the tops are covered so they stay moist during baking.
  7. Sprinkle the remaining mozzarella over the top, followed by the remaining pepperoni and Parmesan cheese.
  8. Bake uncovered for 20–25 minutes, until the cheese is melted and golden in spots and the filling is hot throughout. If you prefer a crispier cheese topping, broil for 1–2 minutes at the end, watching carefully.
  9. Let the pizza enchiladas rest for 5 minutes before serving. Garnish with fresh basil or parsley, if desired.

Notes

  • Warm the tortillas briefly in the microwave under a damp paper towel to prevent cracking while rolling.
  • Use a moderate amount of sauce inside and spread most of it over the top to avoid soggy tortillas.
  • Customize the filling by adding mushrooms, black olives, cooked sausage, or diced jalapeños.
  • Mix mozzarella with provolone or Monterey Jack for an extra cheesy flavor.
