Ingredients
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled sausage (optional)
- 1/4 cup chopped green onions (for garnish)
Instructions
- Preheat the oven to 375°F. Grease a 9×13-inch baking dish.
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder until evenly coated. Spread the sweet potatoes in an even layer in the prepared baking dish.
- Bake the sweet potatoes in the preheated oven for 25 minutes, or until they are tender.
- While the sweet potatoes are baking, in a separate bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheddar cheese and crumbled sausage, if using.
- Remove the baking dish from the oven and pour the egg mixture over the sweet potatoes, ensuring it is evenly distributed.
- Return the casserole to the oven and bake for an additional 25-30 minutes, or until the eggs are set and the top is lightly golden.
- Let the casserole cool for 5 minutes before slicing. Garnish with chopped green onions before serving.
