- 2 lb (900 g) baby potatoes, halved
- 2 tbsp olive oil
- 2 tbsp butter
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup shredded Gruyère or mozzarella cheese
- 2 tbsp chopped fresh parsley
Instructions
- Boil the potatoes in salted water for 10–12 minutes, until just fork-tender. Drain.
- Heat butter and olive oil in a large oven-safe skillet over medium-low heat. Add the onions and cook for 20–25 minutes, stirring occasionally, until deeply golden and caramelized.
- Add the garlic and cook for 1 minute.
- Stir in the beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 3–4 minutes.
- Add the potatoes and gently toss until coated in the French onion mixture.
- Sprinkle the shredded cheese evenly over the top.
- Transfer to a preheated 400°F (200°C) oven and bake for 10–15 minutes, until the cheese is melted and bubbly.
- Garnish with parsley and serve warm.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- Feel free to use different types of cheese based on your preference.
- Make sure to stir the onions frequently to prevent burning.
