Ingredients

  • Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • ¼ cup granulated sugar
  • Pinch of salt
  • Cheesecake Filling
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream
  • 2 tbsp all-purpose flour
  • ¼ tsp salt
  • Fresh Strawberry Topping
  • 2½ cups fresh strawberries, hulled
  • ½ cup granulated sugar
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • Optional Garnish
  • Whipped cream
  • Additional fresh strawberries
  • White chocolate shavings

Instructions

  1. Prepare the crust: Preheat oven to 325°F. Grease a 9-inch springform pan. Combine graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the pan.
  2. Bake the crust for 8–10 minutes. Remove and let cool slightly.
  3. Make the filling: Beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing just until incorporated.
  4. Add vanilla, sour cream, heavy cream, flour, and salt. Mix on low speed until smooth. Avoid overmixing.
  5. Bake: Pour the filling over the crust. Bake for 55–65 minutes, until the edges are set and the center has a gentle jiggle.
  6. Turn off the oven, crack the door open, and let the cheesecake cool inside for 30 minutes. Remove and cool completely at room temperature.
  7. Chill: Cover and refrigerate for at least 6 hours, preferably overnight.
  8. Make the strawberry topping: Slice about 1½ cups of the strawberries and leave the remaining 1 cup whole or halved for decoration.
  9. Add sliced strawberries, sugar, water, and lemon juice to a saucepan. Cook over medium heat for 3–4 minutes, until the strawberries release their juices.
  10. Mix cornstarch with 1 tablespoon water. Stir into the strawberry mixture and cook for 1–2 minutes, until glossy and thickened. Remove from heat and stir in vanilla.
  11. Let the strawberry topping cool completely before spooning it over the chilled cheesecake.
  12. Decorate: Arrange the remaining fresh strawberries over the top. Add whipped cream or white chocolate shavings if desired.
