Ingredients
- 2 cups cooked and shredded fried chicken
- 8 small corn tortillas
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cabbage
- 1 avocado, sliced
- 1/2 cup crumbled cotija cheese
- Fresh cilantro for garnish
- 1/2 cup ranch dressing
- 1 jalapeno, seeds removed and finely chopped
- 1 tablespoon lime juice
- 1 teaspoon lime zest
Instructions
- In a skillet over medium heat, add olive oil and corn kernels. Sprinkle with chili powder, cumin, salt, and pepper. Cook for about 5-7 minutes until the corn is slightly charred. Remove from heat.
- In a separate bowl, mix together ranch dressing, chopped jalapeno, lime juice, and lime zest. Stir until well combined.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- To assemble the tacos, layer shredded fried chicken, charred corn, shredded cabbage, and avocado on each tortilla.
- Drizzle with jalapeno lime ranch and sprinkle with cotija cheese. Garnish with fresh cilantro.
- Serve immediately and enjoy!

- For a spicier kick, leave some seeds in the jalapeno or add a dash of hot sauce to the ranch dressing.
