Description

Ingredients

  • 2 lbs russet or Yukon Gold potatoes, peeled and diced
  • 3 tbsp vegetable oil
  • 1 tbsp butter
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • 2 tbsp butter (for sauce)
  • ½ small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup chopped roasted green chiles
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ¼ tsp black pepper (for sauce)
  • ¼ tsp salt (for sauce, or to taste)
  • ½ cup shredded Monterey Jack or cheddar cheese (optional)
  • 2 tbsp chopped fresh cilantro or parsley (for serving)
  • Sliced green onions (for serving)
  • Extra shredded cheese (optional, for serving)
  • Fried or scrambled eggs (optional, for serving)

Instructions

  1. Prepare the potatoes: Place the diced potatoes in a pot of salted water. Bring to a boil and cook for 5–7 minutes, just until slightly tender. Drain well and let them steam-dry for a few minutes.
  2. Fry the potatoes: Heat the vegetable oil in a large skillet over medium-high heat. Add the potatoes in a single layer. Cook for 10–15 minutes, turning occasionally, until golden brown and crispy.
  3. Season: Add the butter, salt, black pepper, garlic powder, and smoked paprika. Toss until the potatoes are well coated. Transfer to a serving dish.
  4. Make the green chile sauce: In the same skillet, melt 2 tablespoons butter over medium heat. Add the onion and cook for 3–4 minutes until softened. Add the garlic and cook for 30 seconds.
  5. Make the gravy: Sprinkle in the flour and whisk constantly for about 1 minute. Slowly pour in the broth while whisking to prevent lumps.
  6. Add the chile: Stir in the chopped green chiles, cumin, oregano, black pepper, and salt. Simmer for 4–6 minutes, stirring occasionally, until the sauce thickens.
  7. Add cheese: If using, stir in the shredded cheese until melted and smooth.
  8. Pour and serve: Pour the hot green chile sauce generously over the crispy potatoes. Garnish with cilantro or green onions and extra cheese if desired.

Notes

  • For the crispiest potatoes, don’t overcrowd the skillet. Fry them in two batches if necessary.
