Ingredients

  • 2 large russet potatoes (about 1.5 pounds), peeled and grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup vegetable oil (for frying)
  • Chopped fresh chives or parsley (for garnish, optional)

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This will help achieve a crispy texture.
  2. In a large bowl, combine the grated potatoes, salt, black pepper, flour, and beaten egg. Mix until well combined.
  3. Heat the vegetable oil in a large skillet over medium-high heat. You want enough oil to cover the bottom of the skillet.
  4. Once the oil is hot, scoop about 1/2 cup of the potato mixture and form it into a patty. Carefully place it in the skillet. Repeat with additional patties, making sure not to overcrowd the pan.
  5. Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  6. Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
  7. Serve warm, garnished with chopped chives or parsley if desired.
