Description
A delicious and easy-to-make Frozen Caramel Toffee Ice Cream Sandwich Dessert that combines layers of vanilla ice cream, whipped topping, caramel sauce, and chocolate chip cookies.
Ingredients
- 2 cups vanilla ice cream, softened
- 1 cup whipped topping, thawed
- 1/2 cup caramel sauce, plus extra for drizzling
- 1/2 cup toffee bits
- 1 package (12 oz) chocolate chip cookies (about 24 cookies)
- 1/4 cup chopped nuts (optional)
Instructions
- In a large bowl, combine the softened vanilla ice cream, whipped topping, caramel sauce, and toffee bits. Mix until well blended and smooth.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Place half of the chocolate chip cookies in a single layer at the bottom of the prepared baking dish.
- Spread half of the ice cream mixture over the cookies, smoothing it out evenly.
- Add another layer of chocolate chip cookies on top of the ice cream mixture.
- Pour the remaining ice cream mixture over the second layer of cookies, smoothing it out again.
- Top with the remaining chocolate chip cookies, pressing them down gently.
- Cover the dish with plastic wrap and freeze for at least 4 hours or until firm.
- Once frozen, lift the dessert out of the dish using the parchment paper overhang. Cut into squares and drizzle with additional caramel sauce before serving.
Notes
- For a richer flavor, try using chocolate ice cream instead of vanilla.
- You can also substitute the toffee bits with crushed Oreos or M&M’s for a fun twist.
