Description

A delicious and easy-to-make Frozen Caramel Toffee Ice Cream Sandwich Dessert that combines layers of vanilla ice cream, whipped topping, caramel sauce, and chocolate chip cookies.


Ingredients

  • 2 cups vanilla ice cream, softened
  • 1 cup whipped topping, thawed
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/2 cup toffee bits
  • 1 package (12 oz) chocolate chip cookies (about 24 cookies)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. In a large bowl, combine the softened vanilla ice cream, whipped topping, caramel sauce, and toffee bits. Mix until well blended and smooth.
  2. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  3. Place half of the chocolate chip cookies in a single layer at the bottom of the prepared baking dish.
  4. Spread half of the ice cream mixture over the cookies, smoothing it out evenly.
  5. Add another layer of chocolate chip cookies on top of the ice cream mixture.
  6. Pour the remaining ice cream mixture over the second layer of cookies, smoothing it out again.
  7. Top with the remaining chocolate chip cookies, pressing them down gently.
  8. Cover the dish with plastic wrap and freeze for at least 4 hours or until firm.
  9. Once frozen, lift the dessert out of the dish using the parchment paper overhang. Cut into squares and drizzle with additional caramel sauce before serving.

Notes

  • For a richer flavor, try using chocolate ice cream instead of vanilla.
  • You can also substitute the toffee bits with crushed Oreos or M&M’s for a fun twist.
