Description
Frozen S’mores Churro Ice Cream Tacos are a delightful dessert combining the flavors of s’mores with the fun of churros, all wrapped in a taco shell.
Ingredients
- 8 small flour tortillas
- 60 g unsalted butter, melted
- 100 g granulated sugar
- 1½ teaspoons ground cinnamon
- 1 litre vanilla ice cream, slightly softened
- 100 g mini marshmallows
- 80 g chocolate chips or chopped chocolate
- 100 g graham crackers, roughly crushed
- 150 g semi-sweet or milk chocolate, chopped
- 1 teaspoon coconut oil, optional
- 50 g crushed graham crackers, for coating
- 100 g mini marshmallows (for topping)
- 60 g chocolate sauce
- 30 g crushed graham crackers (for topping)
Instructions
- Preheat the oven to 175°C. Warm the tortillas briefly so they become flexible. Fold each tortilla into a taco shape and place them between the bars of an oven rack or over a taco mold to hold their shape.
- Brush both sides with melted butter.
- Mix the sugar and cinnamon together. Sprinkle generously over the buttered tortillas.
- Bake for 8–10 minutes, until crisp and lightly golden. Let them cool completely while maintaining their taco shape.
- In a large bowl, gently fold the softened vanilla ice cream with mini marshmallows, chocolate chips, and crushed graham crackers.
- Spoon the ice cream mixture into the cooled churro taco shells, filling them generously.
- Place the tacos on a parchment-lined tray and freeze for 2–3 hours, or until firm.
- Melt the chocolate with coconut oil, if using, in short intervals in the microwave, stirring until smooth.
- Dip or drizzle the edges of the frozen tacos with melted chocolate, then immediately sprinkle with crushed graham crackers.
- Return to the freezer for 15–20 minutes to set the chocolate.
- Before serving, drizzle with chocolate sauce and add mini marshmallows and extra crushed graham crackers.
Notes
- Ensure the tortillas are warm enough to fold without cracking.
- For a richer flavor, use high-quality chocolate for the coating.
- These tacos can be made ahead of time and stored in the freezer.
