Description

Frozen S’mores Churro Ice Cream Tacos are a delightful dessert combining the flavors of s’mores with the fun of churros, all wrapped in a taco shell.


Ingredients

  • 8 small flour tortillas
  • 60 g unsalted butter, melted
  • 100 g granulated sugar
  • 1½ teaspoons ground cinnamon
  • 1 litre vanilla ice cream, slightly softened
  • 100 g mini marshmallows
  • 80 g chocolate chips or chopped chocolate
  • 100 g graham crackers, roughly crushed
  • 150 g semi-sweet or milk chocolate, chopped
  • 1 teaspoon coconut oil, optional
  • 50 g crushed graham crackers, for coating
  • 100 g mini marshmallows (for topping)
  • 60 g chocolate sauce
  • 30 g crushed graham crackers (for topping)

Instructions

  1. Preheat the oven to 175°C. Warm the tortillas briefly so they become flexible. Fold each tortilla into a taco shape and place them between the bars of an oven rack or over a taco mold to hold their shape.
  2. Brush both sides with melted butter.
  3. Mix the sugar and cinnamon together. Sprinkle generously over the buttered tortillas.
  4. Bake for 8–10 minutes, until crisp and lightly golden. Let them cool completely while maintaining their taco shape.
  5. In a large bowl, gently fold the softened vanilla ice cream with mini marshmallows, chocolate chips, and crushed graham crackers.
  6. Spoon the ice cream mixture into the cooled churro taco shells, filling them generously.
  7. Place the tacos on a parchment-lined tray and freeze for 2–3 hours, or until firm.
  8. Melt the chocolate with coconut oil, if using, in short intervals in the microwave, stirring until smooth.
  9. Dip or drizzle the edges of the frozen tacos with melted chocolate, then immediately sprinkle with crushed graham crackers.
  10. Return to the freezer for 15–20 minutes to set the chocolate.
  11. Before serving, drizzle with chocolate sauce and add mini marshmallows and extra crushed graham crackers.

  • For a richer flavor, use high-quality chocolate for the coating.
