Description

Garlic Oil Roasted Vegetables are a delicious and healthy side dish, featuring a variety of colorful vegetables roasted to perfection with a flavorful garlic oil mixture.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 medium carrots, peeled and sliced
  • 1 medium red bell pepper, chopped
  • 1 medium zucchini, sliced into half-moons
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 teaspoon lemon zest (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  3. Wash and thoroughly dry all the vegetables.
  4. Cut them into similar-sized pieces so they roast more evenly.
  5. In a small bowl, combine the olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper.
  6. Stir well to distribute the garlic and seasonings throughout the oil.
  7. Place the broccoli, cauliflower, carrots, bell pepper, zucchini, and red onion in a large mixing bowl.
  8. Pour the garlic oil mixture over the vegetables.
  9. Toss thoroughly until every piece is lightly coated.
  10. Spread the vegetables across the baking sheet in a single layer. Use two baking sheets if necessary to avoid overcrowding.
  11. Roast for 25–35 minutes, tossing the vegetables halfway through cooking.
  12. Check the vegetables after 20 minutes. The broccoli and zucchini may finish sooner than the carrots and cauliflower.
  13. Continue roasting until the edges are golden brown and the vegetables are tender when pierced with a fork.
  14. Remove from the oven and immediately drizzle with fresh lemon juice.
  15. Sprinkle with Parmesan cheese, fresh parsley, lemon zest, or red pepper flakes, if desired.
  16. Toss gently to combine.
  17. Serve warm while the vegetables are caramelized and fragrant.

Notes

  • Feel free to substitute any of the vegetables with your favorites.
  • For a vegan option, omit the Parmesan cheese.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
