Description
Garlic Shrimp & Sausage Cabbage Cups are a delicious and healthy dish featuring tender shrimp and savory sausage served in crispy cabbage leaves.
Ingredients
- 1 large head green cabbage
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound (450 g) large shrimp, peeled and deveined
- 8 ounces (225 g) smoked sausage, sliced into rounds
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ½ small yellow onion, diced
- 1 small red bell pepper, diced
- 1 tablespoon butter
- ½ teaspoon smoked paprika
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Carefully remove 8 large outer cabbage leaves. Bring a large pot of water to a boil and blanch the cabbage leaves for 2–3 minutes, until softened. Transfer them to ice water, then drain and pat dry. Arrange the leaves in a muffin tin or small oven-safe bowls, gently pressing them into the cups. Brush lightly with olive oil and season with salt and pepper. Bake for 8–10 minutes, just until the edges begin to crisp.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 3–4 minutes, stirring occasionally, until lightly browned. Remove the sausage and set aside.
- Add the remaining olive oil and the diced onion and bell pepper to the same skillet. Cook for 3–4 minutes until slightly softened. Add the minced garlic and cook for another 30 seconds.
- Add the shrimp, butter, smoked paprika, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for 2–3 minutes per side, until the shrimp are pink and opaque. Return the sausage to the skillet and toss everything together. Add the lemon juice and parsley. Stir well and remove from the heat.
- Carefully spoon the garlic shrimp and sausage mixture into the baked cabbage cups. Return to the oven and bake for another 3–5 minutes to heat everything through.
- Garnish with additional fresh parsley and a squeeze of lemon. Serve immediately while the cabbage cups are warm and crisp.
Notes
- Feel free to adjust the spice level by adding more or less red pepper flakes.
- These cups can be made ahead of time and reheated before serving.
- For a low-carb option, you can skip the sausage or use a leaner protein.
