Description

A delicious and moist German Chocolate Cake layered with a rich coconut-pecan filling and topped with chocolate frosting.


Ingredients

  • 200 g all-purpose flour
  • 250 g granulated sugar
  • 60 g unsweetened cocoa powder
  • 1 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 240 ml buttermilk
  • 120 ml vegetable oil
  • 2 tsp vanilla extract
  • 240 ml hot coffee or hot water
  • 120 g evaporated milk
  • 100 g granulated sugar
  • 3 large egg yolks
  • 60 g unsalted butter
  • 1 tsp vanilla extract
  • 100 g sweetened shredded coconut
  • 100 g chopped pecans
  • ¼ tsp salt
  • 115 g unsalted butter, softened
  • 180 g powdered sugar
  • 35 g unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 23 tbsp milk or heavy cream
  • Pinch of salt

Instructions

  1. Preheat the oven to 175°C and prepare the cake pans.
  2. In a large bowl, whisk together the dry ingredients, then add the wet ingredients and mix until smooth.
  3. Divide the batter between the pans and bake for 30–35 minutes.
  4. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the coconut-pecan filling by cooking the ingredients in a saucepan until thickened, then stir in coconut and pecans.
  6. Make the chocolate frosting by beating the ingredients until smooth and spreadable.
  7. Assemble the cake by layering the coconut-pecan filling between the cake layers and frosting the top and sides with chocolate frosting.
  8. Chill the assembled cake for 30–60 minutes before serving.

Notes

  • Don’t overbake—the cake should remain moist.
  • Cool the coconut-pecan filling completely before assembling.
  • Use hot coffee in the cake for a deeper chocolate flavor.
  • Toast the pecans for extra flavor.
  • For an extra-moist cake, brush each layer with simple syrup before filling.
