Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup butter
  • 1 tsp vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1 cup chopped pecans
  • ½ cup chopped pecans
  • ¼ cup sweetened shredded coconut
  • Chocolate shavings, optional

Instructions

  1. Preheat oven to 350°F. Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, oil, and vanilla. Mix until combined.
  4. Slowly stir in the hot coffee or water. The batter will be thin.
  5. Divide between the prepared pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool in the pans for 10 minutes, then transfer to a rack and cool completely.
  7. In a saucepan, combine evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, for 8–10 minutes, until thickened.
  8. Remove from heat and stir in vanilla, coconut, and chopped pecans. Let cool until spreadable.
  9. Place one cake layer on a serving plate. Spread with half of the coconut-pecan frosting. Add the second cake layer and cover the top with the remaining frosting.
  10. Sprinkle with additional pecans and coconut. Add chocolate shavings if desired.
  11. Chill for 30–60 minutes before slicing for cleaner layers.
