Description

A delicious German Chocolate Pecan Poke Cake that combines rich chocolate flavors with a creamy coconut-pecan topping.


Ingredients

  • 1 box German chocolate or chocolate cake mix
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup chocolate fudge sauce
  • ¼ cup caramel sauce
  • 1 can (12 oz) evaporated milk
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • 3 large egg yolks
  • ½ cup unsalted butter
  • 1 tsp vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1 cup chopped pecans
  • ¼ tsp salt
  • ½ cup chocolate chips
  • 2 tbsp heavy cream
  • ¼ cup chopped pecans
  • 2 tbsp toasted coconut (optional)

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. In a large bowl, combine the cake mix, eggs, milk, vegetable oil, and vanilla. Beat until smooth, about 2 minutes.
  3. Pour the batter into the prepared pan and bake according to the package directions, usually 28–33 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool for about 10 minutes. Using the handle of a wooden spoon or the end of a large straw, poke holes all over the cake.
  5. Whisk together the sweetened condensed milk, chocolate fudge sauce, and caramel sauce. Slowly pour the mixture over the cake, spreading it evenly so it soaks into the holes.
  6. In a saucepan over medium heat, combine the evaporated milk, granulated sugar, brown sugar, egg yolks, and butter. Cook for 8–10 minutes, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  7. Remove from the heat and stir in the vanilla, salt, coconut, and pecans. Let the topping cool for 10–15 minutes.
  8. Spread the coconut-pecan mixture evenly over the soaked cake.
  9. Place the chocolate chips and heavy cream in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until smooth. Drizzle the melted chocolate over the coconut-pecan topping. Sprinkle with additional pecans and toasted coconut if desired.
  10. Refrigerate the cake for at least 2 hours before serving. For the best flavor and texture, chill overnight.
