Description

A rich and decadent German Chocolate Pound Cake topped with a creamy coconut-pecan frosting.


Ingredients

  • 225 g unsalted butter, softened
  • 300 g granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 240 g all-purpose flour
  • 40 g unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 180 ml buttermilk
  • 120 g semi-sweet chocolate, melted and slightly cooled
  • 120 ml evaporated milk
  • 100 g granulated sugar
  • 2 large egg yolks
  • 60 g butter
  • 1 teaspoon vanilla extract
  • 100 g sweetened shredded coconut
  • 100 g chopped pecans
  • Pinch of salt

Instructions

  1. Preheat oven to 175°C (350°F). Grease and flour a 10-inch Bundt pan.
  2. Beat softened butter and sugar for 4–5 minutes, until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in vanilla.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Add the dry ingredients to the butter mixture in three additions, alternating with buttermilk. Mix just until combined.
  6. Fold in the melted chocolate until the batter is smooth.
  7. Pour the batter into the prepared Bundt pan and smooth the top. Bake for 55–70 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool in the pan for 15 minutes, then carefully turn onto a wire rack to cool completely.
  9. In a saucepan, whisk together evaporated milk, sugar, egg yolks, butter, vanilla, and salt. Cook over medium-low heat, stirring constantly, for about 8–10 minutes, until thick and creamy.
  10. Remove from heat and stir in coconut and chopped pecans. Let the topping cool for a few minutes, then spread generously over the cooled pound cake.

Notes

  • For an even richer chocolate flavor, drizzle the finished cake with melted semi-sweet chocolate before adding the coconut-pecan topping.
