Description
Crispy German Potato Pancakes made from grated potatoes and onions, perfect for a delicious side dish or breakfast.
Ingredients
- 2 pounds russet potatoes (about 4 large), peeled
- 1 small yellow onion
- 2 large eggs
- ¼ cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder (optional)
- ¼ teaspoon baking powder (optional, for lighter pancakes)
- ¼ cup vegetable oil or canola oil (more as needed)
- Chopped fresh parsley (for garnish)
- Sour cream (for serving)
- Applesauce (for serving)
- Chives (for garnish)
Instructions
- Grate the potatoes and onion using the large holes of a box grater or a food processor. Place the grated mixture in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Transfer the mixture to a large bowl.
- Add to the bowl: eggs, flour, cornstarch, salt, black pepper, garlic powder (if using), and baking powder (if using). Mix until everything is evenly combined.
- Heat about 2 tablespoons of oil in a large skillet over medium-high heat. Scoop about ¼ cup of the potato mixture into the skillet for each pancake. Flatten each slightly with the back of a spoon. Fry for 3–4 minutes per side, or until deep golden brown and crispy. Transfer to a paper towel-lined plate. Repeat with the remaining batter, adding more oil as needed.
- Serve immediately while hot with sour cream, applesauce, fresh chives or parsley, smoked salmon (optional), or crispy bacon and fried eggs for a hearty breakfast.
Notes
- Russet potatoes are best because of their high starch content, which helps create crispy pancakes.
- Squeezing out as much moisture as possible is the key to achieving extra-crispy results.
- Keep cooked pancakes warm on a baking sheet in a 200°F oven while frying the remaining batches.
- For extra flavor, add 2 tablespoons grated Parmesan cheese, 1 teaspoon paprika, or a pinch of nutmeg to the batter.
