Description
A cozy and hearty German Potato Soup that is perfect for chilly days.
Ingredients
- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced (about 1.5 pounds)
- 4 cups vegetable broth
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup chopped fresh parsley (for garnish)
- Optional: 1/2 cup cooked bacon, crumbled
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced potatoes, carrots, and celery to the pot, stirring to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Return the soup to the pot and stir in the milk, thyme, smoked paprika, salt, and pepper. Heat through for another 5 minutes.
- If using, stir in the crumbled bacon just before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
Notes
- For a creamier texture, use heavy cream instead of milk.
- Add cooked sausage or ham for extra protein and flavor.
