Description

A cozy and hearty German Potato Soup that is perfect for chilly days.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced (about 1.5 pounds)
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup chopped fresh parsley (for garnish)
  • Optional: 1/2 cup cooked bacon, crumbled

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced potatoes, carrots, and celery to the pot, stirring to combine.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  6. Return the soup to the pot and stir in the milk, thyme, smoked paprika, salt, and pepper. Heat through for another 5 minutes.
  7. If using, stir in the crumbled bacon just before serving.
  8. Ladle the soup into bowls and garnish with fresh parsley.
