Description
A delicious and refreshing gluten-free dessert made with layers of cake, crushed pineapple, and creamy filling.
Ingredients
- 1 gluten-free yellow or vanilla cake, baked and cut into cubes
- 1 can (20 oz) crushed pineapple, drained
- 1 package (8 oz) cream cheese, softened
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- ⅓ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup shredded coconut, optional
- Maraschino cherries or fresh pineapple, for garnish
Instructions
- Bake the gluten-free cake according to package directions. Cool completely and cut into bite-sized cubes.
- Beat cream cheese, granulated sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Gently fold half of the whipped cream into the cream cheese mixture.
- Layer the cake cubes, crushed pineapple, cream cheese mixture, and coconut in a trifle bowl.
- Repeat the layers until the bowl is full.
- Top with the remaining whipped cream and garnish with pineapple, coconut, or cherries.
- Refrigerate for 2–4 hours before serving.
Notes
- Make sure the cake is completely cooled before cutting to avoid sogginess.
- Feel free to customize the garnish with your favorite fruits.
