Description

Delicious golden potato and zucchini rosti bites filled with feta, spinach, and sun-dried tomatoes, perfect as a snack or appetizer.

Ingredients

  • 1 lb russet or Yukon Gold potatoes, peeled
  • 1 medium zucchini
  • 2 large eggs, lightly beaten
  • ½ cup all-purpose flour
  • ½ cup crumbled feta cheese
  • 1 cup fresh spinach, finely chopped
  • ⅓ cup sun-dried tomatoes, drained and finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp chopped green onions
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • 3 tbsp olive oil, for frying
  • ½ cup plain Greek yogurt (optional for dip)
  • 1 tbsp lemon juice (optional for dip)
  • 1 small garlic clove, minced (optional for dip)
  • 1 tbsp chopped fresh parsley (optional for dip)
  • Salt and black pepper, to taste (optional for dip)

Instructions

  1. Prepare the vegetables: Grate the potatoes and zucchini using a box grater. Place them in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. Finely chop the spinach, sun-dried tomatoes, garlic, and green onions.
  2. Make the rosti mixture: In a large bowl, combine the grated potatoes and zucchini. Add the eggs, flour, feta, spinach, sun-dried tomatoes, garlic, and green onions. Season with salt, black pepper, and oregano. Mix until everything is evenly distributed.
  3. Shape the bites: Scoop about 2 tablespoons of mixture at a time and shape into small patties approximately 2–3 inches wide. Press gently to help each bite hold its shape.
  4. Cook until golden: Heat 1–2 tablespoons of olive oil in a large nonstick skillet over medium heat. Place the patties in the skillet, leaving space between them. Fry for about 3–4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate.
  5. Prepare the optional dip: Combine the Greek yogurt, lemon juice, minced garlic, parsley, salt, and pepper in a small bowl. Stir until smooth and refrigerate until ready to serve.

Notes

  • Squeeze out excess moisture from the zucchini and potatoes for crispier bites.
  • Don’t overcrowd the pan while frying.
  • Chop the filling finely to help the patties hold together.
  • For oven baking, arrange patties on an oiled baking sheet and bake at 425°F for 20–25 minutes, flipping halfway through.
