Description

A delicious and hearty Golden Sweet Potato & Butternut Pot Pie with a flavorful Garlic Parmesan Crust.


Ingredients

  • 2 medium sweet potatoes, peeled and cut into cubes
  • 450 g butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 500 ml vegetable broth
  • 180 ml heavy cream or half-and-half
  • ½ tsp dried thyme
  • ½ tsp dried sage
  • ¼ tsp nutmeg
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ cup frozen peas
  • ½ cup grated Parmesan cheese
  • 1 sheet puff pastry, thawed
  • 2 tbsp melted butter
  • 1 clove garlic, finely minced
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • 1 egg + 1 tbsp water, beaten

Instructions

  1. Preheat oven to 200°C (400°F). Toss the sweet potatoes and butternut squash with olive oil, salt, and pepper. Roast for 25–30 minutes, until tender.
  2. Melt butter in a large skillet over medium heat. Add onion and cook for 3–4 minutes. Add garlic and cook for another 30 seconds.
  3. Sprinkle in the flour and stir for 1–2 minutes. Slowly whisk in the vegetable broth, followed by the cream.
  4. Add thyme, sage, nutmeg, salt, and pepper. Simmer for 4–5 minutes, until the sauce thickens.
  5. Fold the roasted sweet potatoes, butternut squash, peas, and Parmesan into the sauce. Transfer the mixture to a 2-quart baking dish.
  6. Mix melted butter with minced garlic and parsley. Place the puff pastry over the filling, trim the edges, and gently press around the dish to seal.
  7. Brush the pastry with egg wash. Sprinkle generously with Parmesan and brush or drizzle with the garlic butter mixture. Cut a few small slits in the top for steam to escape.
  8. Bake at 200°C (400°F) for 25–30 minutes, or until the crust is puffed and deeply golden and the filling is bubbling.
  9. Let rest for 10 minutes before serving.
