A delicious and hearty Golden Sweet Potato & Butternut Pot Pie with a flavorful Garlic Parmesan Crust.
Ingredients
- 2 medium sweet potatoes, peeled and cut into cubes
- 450 g butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp butter
- 3 tbsp all-purpose flour
- 500 ml vegetable broth
- 180 ml heavy cream or half-and-half
- ½ tsp dried thyme
- ½ tsp dried sage
- ¼ tsp nutmeg
- ¾ tsp salt
- ½ tsp black pepper
- ½ cup frozen peas
- ½ cup grated Parmesan cheese
- 1 sheet puff pastry, thawed
- 2 tbsp melted butter
- 1 clove garlic, finely minced
- 3 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh parsley
- 1 egg + 1 tbsp water, beaten
Instructions
- Preheat oven to 200°C (400°F). Toss the sweet potatoes and butternut squash with olive oil, salt, and pepper. Roast for 25–30 minutes, until tender.
- Melt butter in a large skillet over medium heat. Add onion and cook for 3–4 minutes. Add garlic and cook for another 30 seconds.
- Sprinkle in the flour and stir for 1–2 minutes. Slowly whisk in the vegetable broth, followed by the cream.
- Add thyme, sage, nutmeg, salt, and pepper. Simmer for 4–5 minutes, until the sauce thickens.
- Fold the roasted sweet potatoes, butternut squash, peas, and Parmesan into the sauce. Transfer the mixture to a 2-quart baking dish.
- Mix melted butter with minced garlic and parsley. Place the puff pastry over the filling, trim the edges, and gently press around the dish to seal.
- Brush the pastry with egg wash. Sprinkle generously with Parmesan and brush or drizzle with the garlic butter mixture. Cut a few small slits in the top for steam to escape.
- Bake at 200°C (400°F) for 25–30 minutes, or until the crust is puffed and deeply golden and the filling is bubbling.
- Let rest for 10 minutes before serving.

- For a vegetarian option, ensure the vegetable broth is suitable for vegetarians.
- Feel free to add other vegetables like carrots or mushrooms for extra flavor.
- This pot pie can be made ahead of time and baked just before serving.
