Ingredients
- 1 cup (225 g) unsalted butter
- 7 oz (200 g) dark chocolate, chopped
- 1 cup strong brewed espresso or strong coffee
- 1 ½ cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ cup cocoa powder
- ½ teaspoon salt
- Optional Espresso Chocolate Glaze: 1 cup chocolate chips, ½ cup heavy cream, 1 teaspoon espresso powder
Instructions
- Preheat the oven to 325°F (160°C). Grease and line an 8 or 9-inch round cake pan with parchment paper.
- In a saucepan over low heat, melt the butter and chopped chocolate together. Stir until smooth. Add the hot espresso and mix well. Let cool slightly.
- In a large bowl, whisk the sugar, eggs, and vanilla until smooth and slightly thick.
- Slowly pour the chocolate mixture into the egg mixture while whisking continuously.
- Sift in the flour, cocoa powder, and salt. Fold gently until just combined.
- Pour the batter into the prepared pan and bake for 35–40 minutes. The center should remain slightly gooey.
- Let the cake cool in the pan for about 20 minutes, then transfer to a rack.
Notes
- For a richer flavor, use high-quality dark chocolate.
- Serve with whipped cream or ice cream for an extra treat.
